It’s made by cooking down butter to remove the water and milk solids (“clarifying”), a process which leaves it lactose- and casein-free. This same purifying process gives ghee its remarkably high smoke point, which means doesn’t burn or chemically alter at high heats, so it’s great for frying and sautéing, and equally delicious on toast, in coffee, drizzled on popcorn, or even enjoyed on its own.
